Currently collections cannot be deleted and my daughter created multiple collections in my phone. Would be great to be able to delete these

Good question - Collections did change a bit in the last update, but you can still delete collections that you have created.
Just scroll to the bottom, tap Settings, and then select Delete.
That being said, the Settings option only shows up after you've added at least one passage, so you may need to add a single passage to the collection if it's empty.

I can’t delete collections. I go into settings and delete myself and it’s removed. However, when I go back into the app, all of the groups and collections are restored as if they weren’t deleted.

Can you delete single verses that you have selected? Or edit them?

It is a little hidden, but you can delete collections by tapping Settings from inside the collection. There is a delete button there that will remove the whole collection.
